Homemade Chicken Salad

I LOVE chicken salad, but I love it even more when I can trust the ingredients that go into it. What better way to ensure a healthy, fresh chicken salad than to make it yourself? Check out the super simple recipe below:

Ingredients:

  • 3 cups shredded rotisserie chicken (approximately 1 whole chicken)
  • 1/2 cup diced, organic green grapes
  • 1 cup mayonnaise (preferably homemade)
  • 2 tbsp dried green onion
  • Salt & Pepper, to taste

Directions:

  1. Mix all ingredients together with a spoon.
  2. Serve with sliced cucumbers and avocado (Macros counted separately).

Macros Per Serving:

  • Calories: 343 
  • Fat: 27g
  • Carbohydrates: 12g
  • Protein: 26g
