Protein English Muffins for Two

Need a quick, protein-packed breakfast that doesn’t taste like chalk or take 30 minutes to prep? We’ve got you covered. These microwave-friendly English muffins come together in just a couple of minutes!

Serves: 2

Prep Time: 2 minutes

Cook Time: 2 minutes

Ingredients:

  • 2 tbsp butter
  • 1 egg
  • 2.5 tbsp almond flour
  • 1.5 tbsp Unflavored A2 Protein
  • 1 tsp baking powder
  • Tiny pinch of salt

Method:

  1. In a medium bowl, melt the butter in a microwave (about 30 seconds). 
  2. Add the egg, almond flour, protein powder, baking powder and salt. Whisk until completely smooth. 
  3. Grease two ramekins. Divide the batter. 
  4. Microwave one at a time for 50 seconds. (You don’t want them underdone, but don’t overdo). 
  5. Let cool, then use a knife to loosen from the edges of the ramekin and invert onto a cutting board. 
  6. Slice in half. Toast lightly. Top with butter, nut butter, jam, honey, eggs, avocado or whatever you desire.
