  1. In a bowl, whisk or blend together the cottage cheese and egg until mostly smooth.
  2. Add the oat flour, almond flour, protein powder, and baking powder. Mix until well combined.
  3. Heat a nonstick skillet over medium heat and melt a little butter.
  4. Pour the batter to form small pancakes.
  5. Cook until golden and crisp on the edges, then flip and cook through.
  6. Serve warm with fruit, nut butter, or syrup of choice.
